Sustainability at Tavero

Since May 2010, goods from excess supplies and leftover food have been given to the charity "Schweizer Tafel" (only available in German version) daily. Schweizer Tafel provides direct, practical support to disadvantaged people and those in need in Switzerland.

Since the start of November 2018, Tavero has been able to reduce its food waste by 44% to 69 grams per meal thanks to an extensive awareness campaign and targeted optimisation of processes and food offerings.

Tavero has also reduced the number of menus on Fridays from three to two, since 21% fewer guests dine in the restaurant on this day. The downsized offering will help Tavero additionally in keeping food waste low on the last day of the week.
To reduce CO2 emissions at the site further, a meat and fish-free day was held at Tavero on 7 November 2019. Refraining from eating fish and meat on this one day saved 5.5 tonnes of CO2, which is equivalent to the emissions of five single-family homes.

The Tavero chefs showed that they can also keep their guests happy and satisfied with vegetarian and vegan dishes. But there was still the question of whether more could be done.
The Hiltl Akademie is the centre of excellence for vegetarian and vegan cuisine.
To learn from the best, 24 Tavero chefs took a professional vegetarian cookery course at Hiltl. They returned to the Tavero kitchens with fresh ideas and bubbling with creativity.

The menu plan has now been 50% vegetarian since May 2020, versus only around 30% previously.

This is already a big step towards greater sustainability as regards nutrition.

On World Vegetarian Day (1 October) this year, Tavero only offered vegetarian and vegan dishes in the staff restaurants.
